SEVILLE ORANGE, MYER LEMON & YELLOW PASSIONFRUIT MARMALADE

Ingredients:
6 Myer lemons
1½ litres (6 cups) water
2/3 cup passionfruit pulp (approx 6 passionfruit)
3 Seville oranges *
2¼ kg sugar
* Other variety of orange may be used.

Method:
Wash fruit, cut unpeeled lemons and oranges into thin slices. Put in bowl, add water, stand covered overnight.

Next day, put oranges, lemons and the liquid in large saucepan, bring to the boil, reduce heat, simmer covered 20 minutes or until tender.

Add sugar, stir over low heat until dissolved. Bring to the boil, boil gently uncovered 25 minutes or until marmalade jells when tested on a cold saucer.

Remove from heat, add passion fruit pulp, mix well.

Pour into hot sterilized jars and seal.
