1 peeled pommelo ( separate into segments)
40g small prawns or shrimps (cooked and de-veined)
3 cloves garlic, peeled and crushed
juice of 2 or 3 limes
20mls fish sauce,
chopped chillies to taste or chilli flakes
fresh mint for garnish

Peel away the thin fibrous membrane from each segment of the pommelo. Place in a glass bowl or on a platter. Cover and refrigerate for an hour or so.

Flake the chilled pommelo segments into the bowl. Mix the crushed garlic, lime juice and fish sauce, pour over the pommelo. Toss in the prawns and garnish with chopped chillies and mint leaves just before serving.
