LIME AND DURIAN CREAM CHEESE PIE

Ingredients:
3 eggs
½ cup sugar
1 Tbl lemon rind
½ lb pkt cream cheese
¼ cup lime juice
1 cup durian pulp
1 pie shell

Method:
Mix eggs and sugar in a bowl until fluffy in a double saucepan over heat. Add lime juice and rind gradually, stirring all the time. Continue to cook over boiling water until thick and smooth.

Cool slightly, then blend in cream cheese until smooth.

Add Durian pulp (which has been strained through a gauze to remove any strings). Pour into a pie shell, decorate with whipped cream. Put in fridge to set - serve cold.
