1 green jack fruit (with immature seeds)
2 Tbl masala or curry powder
1 tsp turmeric
1 small onion chopped
5 or 6 cloves of garlic minced
salt to your taste
½ cup of oil for cooking (olive oil)
coriander if possible

Cutting jack fruit: Oil knife and hand first. Halve the fruit (lengthwise). Remove and discard skin and core from segments. Cut remaining segments into three-eighths to half-inch pieces.

Cooking: Heat oil in a pot and brown chopped onion. Add garlic, masala or curry powder, turmeric and fry 1 minute. If dry, add a little water.

Add jackfruit, mix thoroughly, add salt and a little more water. Cook till tender.

When cooked, sprinkle with coriander and serve hot or cold with rice or roti (bread).
