125 g butter
125 g brown sugar
1 egg
¾ cup of finely-cut, dry jakfruit
1 cup SR flour

Beat butter and brown sugar together, then add the egg. Stir in the jakfruit then mix in the flour.

Spread in a greased 9" pan and bake in a moderate oven for 30 minutes. Cut into fingers when cool.

(½ tablespoon of water may be added to the mixture, if the jakfruit is very firm or too dry).

Jakfruit may be substituted for sultanas in many basic recipes, but since it doesn't absorb as much liquid as dried sultanas do, the recipes may need to be altered slightly.
