1 kg brown sugar
30g stick cinnamon
2 cups water
Bring the sugar, water and spices to the boil while stirring to dissolve the sugar.
Cover pulp with the syrup and simmer slowly for 20 minutes.
Place in sterilized jars and seal. When opened, the fruit will be flesh-coloured and have a very delicate flavour.
