MAMEY SAPOTE MUFFINS

Ingredients:
1½ cups wholemeal S. R. Flour
60g butter
½ cup castor sugar
½ cup milk
3 eggs
1 tsp mixed spice
1½ - 2 cups Mamey Sapote

Method:
Sift flour into bowl. Rub in butter.

Add sugar and spice. Beat eggs in milk, add to flour mixture until blended.

Add Mamey Sapote puree, place in muffin pan and bake in a moderate oven for 20 minutes (12 small) or 30 minutes (6 large deep muffins).
