MAMEY SAPOTE FLUMMERY

Ingredients:
1½ Tbl plain flour
½ cup sugar
2 Tbl gelatine
350 ml water
½ tsp cinnamon
1 tsp vanilla
1 cup mamey sapote pulp (mashed and sieved)
2 Tbl lemon juice

Method:
Mix sugar, flour and gelatine together in saucepan, add water and mix well.

Bring to boiling point then pour into large bowl to cool.

Whisk till white and fluffy. Add vanilla. Add mamey sapote pulp, cinnamon and lemon juice, mix well.

Pour into dish to set. Serve with custard or cream.
