MAMEY SAPOTE FRUIT CAKE

Ingredients:
1 cup olive oil or butter
1 cup honey or sugar
1 tsp vanilla
1 pkt mixed fruit
1 cup cold mashed mamey sapote (cooked)
2 eggs
2 cups wholemeal self-raising flour

Method:
Beat olive oil and honey or butter and sugar and vanilla. Add eggs and beat well, then add mashed mamey sapote, then fruit and flour.

Put into a greased tin and bake 45 mins. at 300°F.

Note: The mamey has a chocolate taste.
