GREEN MANGO SALAD

Ingredients:
4 small green mangoes
¼ cup coconut cream
2 Tbl lemon juice or vinegar
1 small onion, chopped
Salt and pepper to taste

Method:
1. Wash, peel and grate the mangoes.

2. Mix the coconut cream, lemon juice or vinegar in a bowl.

3. Add the grated mango and chopped onion and mix well. Add salt and pepper to taste.

4. Leave to stand for at least 10 minutes before serving. Four servings.
