MANGO CHICKEN SAUSAGES WITH CHILLI MANGO SAUCE

Ingredients:
1 kg chicken mince
4 spring onions, chopped
3 cups finely ground bran
4 cloves garlic, minced
2 cups mango flesh, chopped
2 eggs - lightly beaten
salt and pepper to taste

Method:
Mix all ingredients together until well combined.

Divide into 20 portions. Shape each portion into sausage shape with wetted hands. Cover and refrigerate for 1 hour.

Heat oil in pan. Add sausages, fry until browned all over and cooked through.

Serve with sweet chilli sauce (or any sauce to your liking) or mix equal portions of sauce and mayonnaise.
