1 packet morning coffee biscuits (a plain, rectangular biscuit)
4-5 mangoes (may be fresh or frozen)
1 lime or lemon
½ cup sugar
½ cup custard powder

Puree the mangoes, place into a saucepan with the lime or lemon juice and sugar. Cook on a low heat until the sugar is dissolved.

Mix the custard powder in a cup with a little water to a paste and add to the mango sauce. Cook for 5 minutes on high to thicken.

Cool a little, then line a slice tray with foil, lay your base of biscuits in the tray, pour in the mango custard and top with more biscuits.

This can be topped with any icing of your choice. Refrigerate.
