MANGO SAUCE 2

Ingredients:
6 cups green or half-ripe mango slices
1 to 1½ cups water
½ cup coconut cream

Method:
1. Cook mango slices in water until soft.

2. Add coconut cream, and cook for 5 minutes longer.

3. Press the mango mixture through a coarse sieve or mash with a fork until smooth.

4. Serve as a dessert or with meat, or use in recipes requiring a fruit sauce such as chicken in mango sauce (see recipe).

5. Makes 1 litre.
