COCONUT DUMPLING

Ingredients:
6 Tbl of cream
¼ cup sugar
1½ cups of self-raising flour.

Syrup
3 cups of boiling water
2 Tbl of golden syrup
3 Tbl sugar
1 Tbl butter.

Method:
Beat the cream and sugar together, then add flour. Mix to a smooth scone dough, roll out ½-inch thick, cut into squares and place in a large oven dish.

Mix the syrup ingredients together and pour over the dumplings. Sprinkle with coconut, then bake for 30 minutes in a moderate oven.
