GREEN PAWPAW SWEET AND SOUR PICKLE

Ingredients:
4 cups grated green pawpaw
½ cup salt
1 cup vinegar
1 carrot, sliced
2/3 cup sugar
½ green capsicum, sliced
½ red capsicum, sliced
1 onion, sliced
1 tsp salt

Method:
Boil the syrup long enough to melt the sugar.

Add ½ cup salt to the grated pawpaw. Work with hands and express the juice. (Wrap pawpaw by handfuls in a cheesecloth to express the juice better).

Spread the squeezed pawpaw on a tray and let stand for 1 hour.

Put the green pawpaw and the other vegetables in jars.

Pour the boiled syrup in and seal tightly.
