PAPAYA COCONUT PIE

Ingredients:
1½ cups stewed papaya
¼ tsp cloves
1 cup rich milk
1 cup sugar
½ tsp cinnamon
2 beaten cloves
½ cup grated coconut
unbaked pastry shell

TOPPING:
½ cup finely grated coconut
2 Tbl honey

Method:
Put the papaya in a blender and puree.

Add the sugar and spices, eggs, milk, papaya and coconut and blend.

Fill shell and bake for 45 minutes; first at high heat (425°F) and then moderate (350°F).

When nearly cooked, top with remaining coconut, drizzle on warm honey, and return to the oven to brown.
