RIPE PAPAYA PIE

Ingredients:
3 cups ripe papaya
¼ cup calamondin, lemon or lime juice
1 Tbl butter
¾ cup sugar (adjust to sweetness of fruit)
2 Tbl tapioca
½ tsp cinnamon
Double pie crust

Method:
Slice papaya, add sugar, tapioca, and calamondin juice, let stand 10 minutes. Fill pie shell with mixture. Add butter and cinnamon, cover with top crust, place several cuts in it for vents. Bake at 400ºF for 45 minutes until golden brown.
