ripe paw-paw
juice 2 lemons
1 plantain (or 2 bananas)
1 Tbl butter
3 Tbl arrowroot
1 cup sugar
1 cup water.

Peel, seed and mash paw-paw well. Put into saucepan with juice of lemons, sugar and water. Bring to boil and then slowly add the arrowroot blended with a little water, stirring constantly with a wooden spoon.

Cook gently for at least 5 minutes, still stirring. Remove from heat, beat in butter. Lastly stir in sliced plantain or bananas.

Pour into wetted mould and cool. Serve with whipped cream or custard.
