2 lb. pawpaw, weighed after peeling and seeding
1½ lb sugar
1 oz preserved ginger
1 medium-sized lemon
¼ cup water

Dice pawpaw, put in a bowl, add sugar and finely chopped ginger, cover and leave overnight.

Next day, put into pan, add, the thinly sliced lemon and the water. Bring to the boil and boil rapidly until it sets when tested.

Pour into hot, sterilized jars and seal.
