BOILED PASSIONFRUIT AND ORANGE FRUIT CAKE

Ingredients:
½ cup strained passionfruit juice
500g mixed dried fruit (sultanas, apricots, dates, almonds, cashews, currants, banana, pawpaw)
¼ cup orange juice
1 cup sugar
125g butter
3 eggs lightly beaten
¾ cup plain flour (wholemeal)
¾ cup SR flour
1 teaspoon mixed spice (allspice/nutmeg)

Method:
Combine passionfruit and orange juices, mixed fruit, sugar and butter in saucepan. Stir constantly over heat without boiling until sugar is dissolved.

Bring to boil, reduce heat, simmer uncovered for 3 minutes. Remove from heat. Transfer to large bowl, cool to room temperature.

Grease a deep 20cm round cake pan. Line base with paper.

Stir eggs and sifted dry ingredients into cold fruit mixture. Pour into prepared pan. Bake in moderately slow oven for about 1½ hours. Cover cake with foil, cool in pan.

Keeping time - 1 week approximately
