PINEAPPLE ZUCCHINI BREAD

Ingredients:
3 eggs
1¾ cups sugar
1 cup oil
2 tsp baking soda
2 tsp vanilla
1½ tsp cinnamon
¾ tsp nutmeg
¼ tsp baking powder
1 cup chopped pecans
1 cup chopped dates
3 cups flour
2 cups shredded unpeeled zucchini
1 can 8¼ ozs crushed pineapple, drained.

Method:
Beat eggs, oil, sugar and vanilla until thick. Stir in other ingredients, mix well. Pour into 2 greased 9x5 loaf pans and bake at 350ºF for 60 minutes.
