BAKED TARO

Ingredients:
1 taro, scrubbed clean
100g bacon, fried and chopped
25g butter or margarine
1 egg
50g grated cheese
salt and pepper

Method:
Bake taro in oven or microwave until soft to skewer. Cut in half and scoop out centre.

Mash taro with butter, beaten egg and seasoning.

Mix in bacon, place back in taro halves, sprinkle cheese on top of taro and put back in oven until cheese is melted and slightly brown.
