JICAMA SALAD

Ingredients:
500g jicama peeled and diced
1 Tbl fresh chopped coriander
¾ cup Seville orange juice
salt and pepper
1 sweet orange

Method:
Combine jicama, coriander, salt, pepper and orange juice and leave to marinate for 1 hour.

Serve garnished with thinly-sliced and peeled orange.
