1 kg sweet potatoes
1 Tbl butter
2 cups raw sugar
2 cups desiccated coconut
1 cup castor sugar
3 cups plain flour
1½ litre water
Oil for deep frying

Boil the raw sugar in the ½ litre of water. When it becomes a syrup put it aside to allow to cool.

Boil the sweet potatoes until soft and peel the skin. Then mash them together with the butter and castor sugar.

Add in the plain flour and mix them together. Take about a dessertspoon of mashed sweet potato mixture and roll them in between the palms of your hands to make a ball.

Heat the oil in a wok or frying pan and when the oil is hot, place a few balls at a time into it. Fry them until golden brown. Drain them with a paper towel.

When all of them are done, drop the sweet potato balls into the syrup and roll them in the desiccated coconut.

This is a nice sweet served for afternoon tea or a children's birthday party.
