Wash root clean and bake 50 minutes with skin on in 150°C oven.

Scoop out flesh, mash with salt and pepper to form a stiff dough.

Line a greased dish with yam dough; keep some dough to put on top of filling.

Fill the pie with favourable filling, (curries, fish, vegetables, tomato and herbs, cheese, vegetables and herbs, savoury mince etc.) and top with rest of the yam dough.

Cover with foil and bake for about 1 hour at 180°C. A hard crust should form.

If you like, pour coconut cream over the top.
